Simple Victoria sandwich

This week in Guardian Cook there's a slightly different method to make the traditional British Victoria sandwich: a once typical method but a forgotten one. Beating some of the flour in with the butter is a very old method used by home cooks during the early 1900s, and it made the texture slightly more moist as it helps the fat and sugar emulsify better before the eggs are added.
