You can record using the current location or by selecting a point from the map if you can't get an accurate GPS reading. To speak to the thing all you do when the species list comes up is speak into the microphone of the iPhone (a couple of inches away works well) using the English name of a species in the list and it should add it to the 'My Sightings' list. (Note that it says something about the title bar turning green in the help system - it doesn't, so don't wait for that, just speak the name clearly after the list comes up). There are lots of other bits and pieces which you can find in either the help system or preferences page of the app itself. You'll need to switch the species recognition bit on in the preferences section before it works.
and before anyone points out that there are no tree sparrows in the list, I do like the beasts and had to sneak them in somewhere...
