Tasted the 2 Hoi An delicacies - Cao Lau and Fried Wantan Dumplings. The Cao Lau is not quite as slippery as pho and a bit closer in texture to pasta. The secret is the water used to make it, and authentic cao lau uses only water from a special well in the city. I don't think the Cao Lau we had were made from those sacred water, kekeke ~
