Homemade Banana Pudding
Homemade Banana Pudding
3/4 cup sugar
1/3 cup flour
1/4 teaspoon salt
3 egg yolks
2 cups milk
1/2 teaspoon vanilla extract
1 box Nilla wafers
5 bananas, sliced
MIX 3/4 cup sugar, flour and salt in a saucepan over low/medium heat. Blend in 3 egg yolks and milk. Cook, uncovered until thickened, stirring constantly with a wisk. Remove from heat; stir in vanilla.
In a bowl or pan, place one layer of nilla wafers, then cover nilla wafers with sliced bananas. Cover bananas with nilla wafers. Pour some of the custard mixture over the layers. Then do another banana layer, following with a nilla wafer layer. Repeat. Pour more custard over the layers. Be sure that when you're done, Nilla wafers should be the last layer. Use all of your custard for this recipe.
Refrigerate at least one hour before eating. I prefer mine overnight.
Can be served warm, but I like mine served cold. When serving you can top the banana pudding with Redi Whip or Cool Whip.
