madumbi and beetroot for later. beetroot cooked yesterday, left to cool and peeled this morning. madumbi to be peeled and cooked in boiling water later this afternoon

all bought recently from whitechapel market, east london

 

i wasn't happy with yesterday's effort at making persimmon jam/sauce. it tasted ok but it was too thick, more like stewed fruit than a jam/sauce flic.kr/p/2rL7wX3

i recooked the jam/sauce with extra water and lemon juice

brought to the boil

added some more sugar

allowed to 'rolling boil' until satisfied with the result

decanted into jar

result much happier :)
