spicy chicken curry
spicy chicken curry alongside rice, madumbi, bitter gourd, plantain, pesarattu and salad with a serving of tomato chilli sauce
leftover from yesterday flic.kr/p/2rjJWdX madumbi, bitter gourd and pesarattu gently reheated in a warm cast iron pan brushed with oil
fresh plantain was added to the same pan
all gently cooking whilst i'm getting on with the chicken curry
spices dry roasted in a pan on the stove cardamon, cloves, chilli, cumin seeds, coriander seeds, star aniseed
when spices cooled blitzed in the nutribullet put to one side
finely chopped onion cooked in the spicy pan
diced uncooked chicken pieces added (see below)**
pureed fresh green chillies and fresh ginger added
portion of cooked chicken added (see below)*
blized spices added
splashes of water as and when necessary
added chopped fresh tomato and chopped ball pepper
all gently cooked on a low heat a curry needs time
chilli powder and turmeric powder added great colour
splashes of water as and when necessary
later in the cooking added tomato concentrated puree and more water just as and when
in all i gradually added at least 1 cup of water, enough to keep it moist and flavoursome personal judgement
when not checking the curry or stirring the lid is kept on throughout the cooking
all cooking on a gentle heat
* a few days ago chicken portions were cooked with onion and water, bones removed, cooked chicken boxed for the countertop freezer to be made into various recipes as and when
this morning a box was removed, contents thawed, and half was used for this curry. the other half returned to the fridge for tomorrow, maybe a soup
** a few days ago lean chicken was cut into small cubes by the butcher. these cubes of uncooked chicken were boxed for the main freezer to be made into various recipes as and when
this morning one box was removed, contents thawed and a few cubes of chicken added to this curry. the rest returned to the fridge for tomorrow, as yet recipe unknown :)
