vegetable stock

vegetable stock for curries, soups and any meals where stock would be appropriate. a jar for the fridge the rest is boxed for the freezer

 

ingredients potatoes, carrots, parsnips, peppers, onions

simmered for a few hours for flavour on very low throughout (start to finish) on the electric hob and then blended with hand blender

spices/herbs to be added to portions of this stock when appropriate

 

the pan is the pressure cooker pot. where it says 'max 2/3' is the maximum for pressure cooker cooking. i was using it for normal cooking so filled the pan beyond that marker to 5 litres
