third attempt at gluten free sorghum chapatis

(sorghum flour is also known as jowar flour)

 

i mistakenly bought gluten free flour sorghum to make chapatis jalpurmillersonline.com/products/jalpur-stone-ground-sorg... i didn't realise what a problem i'd given myself ...

 

my first chapatis broke up and were inedible - binned.

after watching you tube videos second attempt a slight improvement.

rewatched the videos and made a third attempt, much better.

the chapatis rose as they should. these look anemic but they are cooked. i'll eat later this evening with a curry. next time will attempt to improve the colour.

you tube tutorials were essential in finding out how to cook with sorghum gluten free flour

below is a summary but doesn't replace the tutorials

my first attempt failed. i had tried to make the gluten free chapati as i would when using wheat flour/atta flour www.sainsburys.co.uk/gol-ui/product/elephant-medium-atta-... big mistake ...

 

1 cup water

1 cup gluten free flour

salt

spices can be added to give more flavour and colour

 

boil one cup of water in a saucepan

remove the pan from the heat

add the gluten free flour

mix the flour into the hot water

cover and leave for up to 30 minutes

remove the cover

(add spices eg chilli powder and turmeric, if would like to)

knead the dough

cut the dough into walnut sized balls

flatten each ball and roll into a thin circle/shape

heat the pan

place the chapati on the hot pan

lightly brush water over the top side only

when hot flip over

the chapati will begin to rise

keep flipping over until cooked

remove from the heat when ready

 

basic sorghum flour porridge

start by mixing together ¼ cup of sorghum flour and 2 cups of water in a pot.

stir continuously to prevent lumps from forming until the mixture thickens and starts to boil.

reduce the heat and let it simmer for 5 more minutes

if desired add fruit/nuts/spices/sweetener/honey/vanilla exract etc

serve hot

update on basic sorghum flour porridge

9th november 2023

it didn't thicken tomorrow i'll increase the amount of sorghum flour

i added diced dried apricot, currants, cinnamon, homemade vanilla extract and a teaspoonful of honey for flavour.

the 'porridge' was edible ...

 

10th november, 2023

increased to 1/2 cup of sorghum flour with 2 cups of water

this time the mixture thickened

i added diced dried apricot, currants, cinnamon, homemade vanilla extract and a teaspoonful of honey for flavour

i also added homemade natural yoghurt made with creamy milk

the 'porridge' was an improvement on yesterday's effort

tasted ok ...
