Prickly Pear Fruit, So Ripe!

Found in a heavy machinery parts dealer lot in Mesa, Arizona. So ripe! I know you can make great jelly from the fruit of the prickly pear cactus and the thought tempts me to try it. My son and daughter-in-law made prickly pear jelly one year for Christmas and it was so delightful I have remembered it well over the years.
