Stuffed!

This is a poorly photographed illustration of what I made for dinner last night. My camera battery let me get one shot before its final demise. I made stuffed tomatoes, a la Alton Brown, and portobello mushrooms stuffed with pesto mashed potatoes. And best of all, it was all vegan!
