Roast butterfly pork half, stuffed with Melba toast breadcrumbs, hazelnuts, pine nuts, roast garlic, lemon slice, green pepper, tarragon and shallot.

Snow peas and mushrooms sauteed in tarragon butter.

Roast potatoes.

 

Alan's Butcher Shop in Whitby has these beautiful butterfly pork chops that are wonderfully thick to slice into and stuff with lots of flavourful ingredients. I love working with them.
