Pepperpot is one of Guyana's National Dishes. It is a rich stew traditionally served at Christmas and other special events. It can be made with Beef, Pork, Lamb, Chicken, or the meat of your choice, even a mixed combination.

 

This version was made with pork and salted pigstail and it turned out delicious! The key ingredient is Casreep, a cassava based substance which gives it the flavour and dark colour. The dish has a slightly sweet and savoury flavour and is traditionally served with a good bread to sop up all the gravy!

 

The preservative properties of casreep allows this dish to remain unrefrigerated for days, on the stovetop. True, true! Just warm it up everyday and use a clean utensils every time.

 

I also made this batch in my new Instant Pot. It was only my second time using it and it turned out great, cutting the cooking time down significantly!
