Zucchini souffle
Ingredients:
- Zucchini x 2;
- 3 eggs;
- Sour cream 4 tablespoons;
- Cooking oil 4 tablespoons;
- Flour 4 tablespoons;
- Semi hard pressed cheese diced 100g;
- Dill, salt & pepper.
From the yolk of the 3 eggs and the oil you make the mayonnaises. First mix the yolk with salt and then add the oil little by little.
In this you add the sour cream, the pressed cheese, the dill and pepper and mix them well.
Then you add the flour and mix.
The zucchini must be chopped in very very small pieces. It's best if you use a kitchen robot.
Add the zucchini and mix well.
Use a mixer on the egg white from the 3 eggs and you should get something spongy, beats me how it's called in English.
You need to add this spongy "cream" to the mix, little by little, from bottom to top. DO NOT drop it all in. Little by little. Mix gentle.
Put the final mix in a pan (above is a baking dish heat resistant) and into the oven for 40-60' @ 180°C.
And that is it, zucchini souffle!
