Making Filo Pockets

Place filling at the center of filo squares. Brush whisked egg along the edges, triangulate and fold into a pocket, close edges with a fork, brush whisked egg on upper side and sprinkle with sesame seeds. Use sesame seed color coding to mark different fillings such as meaty and meatless.
