Garlic shrimp and fettucini noodles
Spur of the moment dinner. Stopped by the market, bought 1 lb of cleaned and deviened Argentine Red shrimp and a package of fettucini noodles.
1/2 a stick of unsalted butter, 1/3 cup olive oil (the good stuff from the pantry) sage, rosemary and oregano picked fresh from the garden poached for a couple minutes then removed and discarded, sauted just long enough to perfume the fats. 6 cloves of garlic briefely sauted then added 1 cup of pinot grigio white wine. I simmered and let it reduce by around half. Pasta (2 sevings of 100 grams each) went into salted boiling water for 13 minutes. At 5 minutes left on the pasta, shrimp was added to the poaching liquid and cooked for around 3 1/2 minutes, just long enough to turn the bottoms pink, then flipped for the last 1 1/2 minutes the pasta cooked. At time 13 the pasta was added to the shrimp, the heat was turned up, and 1/2 cup of pasta water was added to the mix. Everything was cooked together for the last little bit until the pasta was cooked to my liking and the shrimp were perfectly cooked.
Plated and garnished with fresh parsely from the garden, the dish was ready.
Delicious. Total time from beginng to plate less than 25 minutes
