Tonight I made a lower fat curry with low fat coconut milk (the stuff for drinking and not necessarily cooking), and I must say it was one of the best ones I have ever made.

 

Ingredients.

 

SO Delicious 45 calorie unsweetened coconut milk

Carrots

Mushrooms

Green Onions

Curry powder

extra Cumin

extra Paprika

Soy Sauce

Sriracha

Lemon Juice

 

Poured over.

 

Frozen peas

Bean Sprouts

Freshly baked tofu.
