for homemade enchiladas
the corn tortillas get sprayed with just a hint of oil on both sides and then put in a low oven 300°F/150°C for 6 minutes to get them soft and warm for easy rolling, keeps them from drying out too when going back in the oven
big bowl has good quality ground beef sauteéd to just past pink and then the sauteéd ingredients in mise en place pic added with 6 oz. of shredded cheese for filling in enchiladas. you could use chicken, or go vegetarian as easily
pot on cooktop has the remains of the sauce pressed out of the meat mixture through a strainer or a sieve, with more sauce added to make about two cups, warm gently and adjust seasonings.
enchiladas laid down, sauce put on top, 3 oz of cheese or so on top (not too much) covered in foil and back in the low oven for 30 min.
