Jackfruit chips
These are jackfruit (chaka in malayalam) chips, deep fried in extra virgin coconut oil. This jack came off the tree a couple of days ago. Once the tough outer spiky green jacket is hacked through, inside are all these light yellow segments containing the seeds in the next picture. Separating all these segments and their enclosed seeds is a sticky labour-intensive job. My parents were at it the whole night.
