Saba with Oboro Konbu - Shira Nui AUD4.50 each
The saba (mackerel) sushi is one of my favourites. It is intensely fishy with a melting flesh. Wrapped in a faintly sweet oboro konbu (transparent kelp), the soft flesh and firm kelp are an interesting combination.
Perhaps I should have used a polarising filter to show the detail of the konbu and see through to the shiny mackerel skin below.
