Beef Stroganoff with unpolished red rice
We love the beefy grass-fed beef from the Little Creek Cattle Company. While it might be tougher than regular beef, it is also tastier.
The trick is to slice thinly and not overcooked it.
I tossed the sliced beef in flour, paprika, salt and pepper and quickly browned it in a pan. I deglazed the pan with some sherry and reserved these juices. Next I sauteed the mushrooms until just cooked. After softening sliced onion and minced garlic, I emptied a can of mushroom soup, wait until it bubbled, and tipped everything in, including the cooking juices. Adjust to taste with more paprika, Worchestershire sauce and more sherry.
Serve with rice, pasta or mashed potatoes.
The sauce looks a bit dark because of the spores form the ripe mushrooms we used. Tastier, but maybe not as appealing.
