Salad of Roasted Sweet Potatoes, Crunchy Spanish Mackarel Skin and Orange.

 

The mackarel skin was leftover after Julia used the flesh for fishballs. I tossed it in some olive oil and dusted it with paprika and flour and whacked it in the oven until it was crunchy!
