Nanahana Spring Vegetable and Squid with Miso, Vinegar and Mustard - Tempura Hajime

Another seasonal dish with what was called nanahana spring vegetable. We think it was a very tender shoot of choy sum-like vegetable, with small yellow flowers.

 

There were also strips of raw squid, which I have since learned to appreciate.

 

The miso, vinegar and mustard dressing had a good tang and enough sweetness. I could easily slather this on cooked spinach, or use it in a coleslaw!
