Enchiladas de Mole Negro sin cebollas

Mole negro hails from the southern Mexican state of Oaxaca. It is made from many ingredients including chocolate, peanuts, almonds, sesame seeds, 2 or 3 different types of chile, clove, avocado leaves, cinammon and other spices. These were made by my mother-in-law, which included chicken, cheese "queso fresco", toasted sesame seeds, and cream "crema mexicana" and of course, tortillas. We complimented these with refried black beans (frijoles refritos) and home made chips (totopos).
