Vegetarian Curry Laksa With Chilli Sambal

A vegetarian version of the popular Malaysian/ Singaporean coconut milk based spicy noodle soup. Here it is served with Chilli Sambal and lime wedges. I adapted Yotam Ottolenghi's recipe from his column in the Guardian.
