Granada's impressive cathedral was pointedly constructed on a site previously occupied by the city's main mosque (no doubt razing a breathtakingly beautiful building to the ground) after the area was ceded by the Nasrid dynasty in 1492. It took 181 years to build and is an awe inspiring piece of Spanish Rennaissance, a curious merging of classical and gothic with towering white columns, a blingtastic organ and enough gold leaf to cover a small country. I spent a lot of the time looking up.
