The making of Jaggery (Gur).
These men are busy making Jaggery from cane sugar at my farm in Punjab. Sugarcane is cut and cleaned and its juice is extracted with the help of a crusher. The juice is then poured in a vessel and heated in a furnace till it thickens and becomes golden in colour. It is constantly stirred till it attains the desired consistency. It becomes a soft solid on cooling. I prefer it any day over refined sugar.
