Pickled beets, a recipe from the book "Smak på Ryfylke," a Norwegian cookbook by one of my cousins from Rennesøy, Sigrid Bø Grønstøl (the title roughly translates to Tastes from Ryfylke). Hopefully my translation of the recipe was relatively close.
