For those back in Britain, don't be thinking rain, burnt burgers and bangers (aka sausages for those offshore from the UK). This is TX pit bbq, with pitmasters nowadays using a modern 'oil drum' type smokers rather than an actual pit in the ground. The meat is cooked and smoked very slowly and usually features brisket and ribs, the latter just sneaking in on the right of above advert. Other meats such as chicken are always available. Apart from lashings of bbq sauce, sides are items such as pinto beans shown here, potato salad, corn casserole, pickles, onions and bread.
