Salted cod is a traditional favourite in places such as San Sebastian which along with the British love of fish and chips has resulted in pretty bad news for the cod as a species over the last couple of hundred years. Thankfully increasingly strict EU regulations have seen the dwindling stocks stablise somewhat with hopes that it will bounce back in strong numbers in the future. Cod like many fish can reach a breaking point in populations levels if they sink too low, beyond which they simply collapse seemingly never to return as happened off the North Eastern coast of North America.
