virtual potluck pasta

Ok kingdufus I barely made the deadline for our virtual potluck! This is pasta with an arugula/pistachio pesto.

 

1 bag baby arugula

1/2 c grated parmesan

1/3 c pistachios

2 Tbs garlic-flavord olive oil

2 Tbs water

 

blend in food processor till smooth...add to pasta and grate parmesan on top.

nice with chianti.

 

you have to like the taste of arugula. Next time (if there is a next time) I would add a 1/2 garlic clove to make it more like the real "green death" pesto

 

I'm still not quite sure I like this but the good news is the dog loved the leftovers.....
