Crottin de Champcol
Crottin de Champcol is a small goat cheese made in the Loire Valley of France. It is named for the small village Champcol. Crottin de Champcol is a pasteurized version of a similar cheese: Crottin de Chavignol.
The cheeses are small, usually around 60 gm (about 2 oz). Younger versions are heavier. The cheese shrinks and dries out as it ages.
