En 1990, un projet de transformer le château d'eau en un restaurant panoramique tournant a été adopté par la Mairie ; début des travaux ont eu lieu en 1998 et se terminent en 2000.
Situé à une altitude de 42 mètres, le restaurant accueille, sur son plateau tournant unique en France, des visiteurs qui peuvent découvrir ainsi, une vue imprenable sur Palavas-les-Flots et ses alentours : la mer Méditerranée, Montpellier, Carnon, La Grande-Motte, Sète.
