This is an example of how important education is. I assume that the owner of the truck has no idea of how possibly offensive the name of his truck is. My guess is that his name is Enrique, and that he is a immigrant. As an immigrant, he may not have made it very far in the Mexican public school system, and as such not have realized that the proper spelling of his nickname in Spanish would be "Quique". Compounding this error is his lack of the Anglophone context, in which "Kike" is a slur

Alternatively, I could be completely wrong, and the owner of the taco truck may simply be an antisemitic purveyor of Mexican food.
