Halibut
Bistro de Paris, Epcot. Slow cooked halibut with pumpkin scales on a fava bean puree with Champagne buerre blanc, saffron potatoes and roasted tomatoes. I would eat that sauce with a spoon. The fish was perfectly cooked and the earthy taste of the beans and pumpkin were a great complement to it. You can barely see the crystals of sea salt on top of the pumpkin, but they made a world of difference.
