Italian Meatballs

This are based upon a Youtube recipe from The Meatball Shop in NYC. I am very pleased that I got 16 half-cup meatballs out of 2.14 pounds of meat (beef and pork ground together).

 

They are currently roasting at 425F in the oven for 20 to 25 minutes. They will then be canned into Mason jars, four per jar, with two cups of homemade Marinara Sauce.
