Meatballs in Marinara Sauce

After I roasted the 16 meatballs in the previous photo, I tried to can them. Hoever, I didn't make enough marinara and so could only do three jars' worth. (Four meatballs per jar.)

 

I was surprised to see that 1/2 cup of the Marinara sauce had siphoned out of each jar! This is the first time this has happened to me. This is also the first time I've attempted to "hot pack" anything, so that I could fill the jars to one inch headspace. However, I had allowed the meatballs to cool, and that may be the reason (in part) that the jars had siphoned: The meatballs had re-expanded during processing and began pushing the sauce out of the jar.

 

Will attempt this again soon, as I want to perfect this technique. Four meatballs with two cups of sauce is perfect (IMO) for one pound of pasta. And the meatballs turned out tender, juicy and delicious.
