From Enjoy Your Meal:
Fishcakes
- 2 medium potatoes
- 2 haddock fillets
- some milk
- a cooking chorizo sausage
- the grated zest of a lemon
- a handful of parsley, chopped finely
- salt and pepper
- some flour
- some butter
- some groundnut oil
1. Boil the potatoes in salted water until soft. Drain and mash.
2. Bake the fish in the milk. Drain and flake into the mash.
3. Fry the chorizo until cooked. Chop into small pieces and add to the mash.
4. Put the zest and the parsley into the mash. Season the mash with salt and pepper, then stir gently until the ingredients are well mixed.
5. Form patties from the mixture and dust them lightly with flour.
6. Fry the fishcakes in oil and a little butter. Eat them.
