Southwestern Wheat Pasta

It's Meatless Monday! You can do this!

 

I am cooking for one and therefore, I like easy and nutritious. I no longer cook a pound of pasta at a time but rather cook maybe 1/3 of the box.

 

Look for Bird's Eye Southwest Style Protein Blends in the freezer section of your grocery store. It combines whole grains, black beans, corn, lentils and red peppers with a zesty sauce. Put the entire bag in the microwave and cook for a few minutes according to instructions.

 

Cook pasta according to package directions. I use thin whole wheat spaghetti and break it in half and use a smaller saucepan of boiling water.

 

While the pasta is cooking, saute some chopped onions in a bit of olive oil. When onions are nearly done, toss in a handful of fresh spinach and cook until wilted.

 

Add the drained pasta to the onions and spinach and add the cooked protein blend and toss together.

(You may want to save a bit of the protein blend for another meal. It is good in an omelet or in a taco.)

 

If desired, add some halved cherry tomatoes.

 

Sprinkle with Parmesan cheese and enjoy!
