The wedding was potluck. Pies were requested for dessert.
Right up our alley! But what kind?
A wedding seems to call for splurging, blowing a whole quart+ of huckleberries,
but the Thanksgiving apple pie was such a success and there are still so many apples from my gleanings last month.
Instead I went for a repeat, this time in a cast iron pan.
Filling: a mix of apples gleaned this fall, a drizzle of concentrated apple juice cooked down to an unsweeteened syrup, instant tapioca, cinnamon, nutmeg, a pinch of salt. Drizzled heavily with honey.
Crust: unbleached white flour, pinch of salt, coconut oil, water, apple syrup
