my mom often recalls of her childhood the planting, weeding & harvesting (& eating!) of potatoes, enough to feed a family of 8 children all year long. She still LOVES potatoes today, at age 77, exclaiming such nearly every time she eats them, especially fresh new ones.
our place was a certified organic potato farm when we bought it from a friend of ours. two days spent harvesting potatoes for him in the fields of what is now our own land was my first paid job here, just a week or so after deciding to stay in this area, in 1996.
