little wasted

the view outside my window this morning:

the carcass of the deer our son harvested last week during the pre-season youth hunt days that are scheduled each october for the two days that school is out statewide for teacher workshops and training.

yesterday evening we butchered and packaged it for the freezer, all of us together, on the dining room table.

the legs are given to the dogs as treats,

excess fat and scraps will be fed to the dogs, cat, chickens, and wild birds that come around.

the neck and other bones are simmering away in a big soup pot on the woodstove,

other bones are cut as bone-in roasts.

shanks will become osso buco.

smaller pieces will be canned in the pressure canner

or put through the grinder today for burgers, taco meat, chile, and pasta sauces.

the heart will be simmered with cinnamon and sliced thinly for lunch meat.

the liver will be made into dumplings.

other internal organs were left out in the woods for coyotes, wolves, bears, cats, eagles, ravens, magpies, and other wild creatures.

 

when all is said and done, our 13 year old will have provided about 70+ pounds of fresh, healthy wild meat for his family, friends and own self.
