Beet and Pineapple Risotto
I loved it, but I suspect that its just because I am borderline fanatical about my veggies. Just the color alone was enough to turn Whitney off on the dish. I should have not mixed the pineapple about so much so the color would contrast. It was by first risotto but I am looking forward to trying others; in the pressure cooker next time!
