spring flowers salad

.....in honour of the 1st of May celebrations

A perfect day to pick some herbs and flowers for a fresh salad.

Recipe :

6 x large lettuce leaves

6 x fresh witloof leaves

handful of rocket or any other edible greens in the garden.

tear greens roughly and put in a large salad bowel

decorate with lots of borage flowers, calendula petals and fresh herbs like mint, coriander and thyme....

toss with a dressing of lemon juice and olive oil.

a great salad to serve with pitas or seafood.
