Cinnamon french toast with maple berry compote

Recipe: serves 2

Berry compote:

1/4 cup blueberries

1/4 cup raspberries

1/4 cup blackberries

2 tbs maple syrup

1. Heat berries and maple syrup over medium heat until mixture comes to a simmer and berries release their juices

 

2 thick-cut (2 cm) slice of white study bread (milk loaf/challah/brioche)

2 eggs

1/2 cup milk

1 tbs sugar

2 tsp vanilla

1 tsp cinnamon

Butter for frying

 

1. Preheat oven to 170 deg

2. Whisk together milk sugar eggs vanilla and cinnamon in a shallow bowl.

3. Dip one piece of bread into the bowl of custard until soaked completely on each side (about 2-3 mins per side)

4. In a frying pan over med high heat heat a knob of butter until foaming. Add soaked bread and fry until underside is well-browned. Flip and cook remaining side.

5. Place french toast in preheated oven for 4-5 min until hot and cooked through. Repeat with remaining slice of bread

6. Serve hot with berry compote and more maple syrup
