Warm individual banana cakes with molten dark chocolate banana ganache centres

Recipe

GANACHE:

112g dark chocolate, chopped

1/4 cup heavy cream

1 ripe banana

1 tbs corn syrup

 

1. Puree banana until smooth.

2. Bring cream to a boil in a small saucepan, pour over dark chocolate in a bowl. Stir to melt chocolate and emulsify completely.

3. Stir in banana puree and corn syrup. Leave to set in the fridge for a few hours until firm.

4. Using a melon baller or small ice cream scoop, form 1.5 inch balls of ganache. Place balls on a paper-lined pan and leave in fridge until needed
