Asian cucumber salad

Serves 2

 

1 cucumber, halved, seeded and sliced

5 leaves napa cabbage, shredded

2 scallions, chopped

1/2 cup toasted and salted peanuts, chopped

 

2 tbsp rice vinegar

2 tsp sugar

2 tbsp chili sauce

1 garlic clove, minced

1/2 cup cilantro (or less but I love cilantro)

1/2 tsp red pepper flakes (optional)

 

In a small bowl, mix vinegar, sugar, chili sauce, garlic, cilantro and red pepper flakes.

In a larger bowl, mix cucumber, cabbage and scallions.

Pour the sauce on the vegetables and let sit for an hour or two in the fridge.

Sprinkle with peanuts before serving.
