Mushroom quinoa
1 cup quinoa
2 cups vegetable broth
1/2 cup dried porcini mushrooms
1 cup water
2 cups mushrooms, sliced
1 small onion, minced
1 garlic clove, minced
1/3 cup soy cream (or soy milk with arrow-root, I don't know if soy cream is common in the US)
1 tsp olive oil
Salt, pepper and spices to taste (i like oregano and basil)
Bring one cup water to a boil and rehydrate porcini mushrooms.
In a large pan (or wok), sauté garlic and onions for 5 min. Add quinoa and vegetable broth.
Cook for 20 minutes, stirring regularly. In the meantime, briefly steam or microwave the sliced mushrooms.
When quinoa is cooked through, add porcini, mushrooms, cream and spices. Cook further for a few minutes until everything is heated through.
