Vietnamese Style Spicy Broth With Cabbage & Mushrooms

20g leeks

9g garlic

5g red chilli

92g mushrooms

5ml dark soy sauce

22g buckwheat noodles

11g spring onion

62g Chinese cabbage

4g fresh mint

 

Basically boil some water in saucepan (around 300 to 350 ml). Add sliced leeks, chopped chilli, sliced garlic, soy sauce and gently simmer whilst prepping other veg. Add sliced mushrooms, shredded cabbage and noodles. Cook for around 4 minutes. Taste and add salt / pepper. Serve in a bowl with chopped fresh spring onions and chopped fresh mint.
