Pearl Barley & Spring Vegetable Broth

I have just eaten the most delicious, most filling lunch I've had since I began this fasting regime ... and it was only 158 calories!

 

88g cooked pearl barley (25g uncooked)

55g leeks

72g mushrooms

104g asparagus

Water

Salt & pepper

 

The pearl barley needs an hour to cook so plan ahead with this one. It's worth it!
