Brushing Syrup

A mixture of simple syrup (2 cups organic sugar and 1 cup water simmered under cover for 5 minutes and cooled) and Rum is liberately brushed (one would say soaked) onto the cake layers.

 

Note: I did not use the top crust of the genoise for this cake (had it toasted with jam and a cup of tea later...)
